http://chic.clipsyndicate.com/video/playlist/12463/6836314?cpt=8&wpid=2637 Mon, 20 Mar 2017 11:25:20 +0000 Meatless Monday Recipe Here's a filling dinner meal that's packed with southwestern flavor http://chic.clipsyndicate.com/video/playlist/12463/6836314?cpt=8&wpid=2637 KY3 - KYTV "====lklive== ==" southwestern sweet potato bowls w/ creamy lime sauce "buddha bowls" or "nourish bowls" dietician lindsay sparks, mercy hospital yields: 4 to 5 servings serving size: about 1 ½ cups ingredients: 1 cup quinoa, pre-washed or rinsed well in fine meshed colander 2 cups reduced sodium broth 4 cups kale , washed and middle stalk/stem cut away 2 tbsp olive oil ½ lime, juiced 2 medium sweet potatoes, diced into ½ inch cubes 2 tbsp olive oil 1 tsp ground cumin 1 tsp smoked paprika 1 tsp chili powder ½ tsp salt 15 oz can unsalted black beans, drained and rinsed tsp garlic powder creamy lime sauce: ½ cup plain greek yogurt 1 jalapeno, deseeded and minced ½ lime, juiced 1 tsp minced garlic ½ tsp ground coriander cup cilantro, minced ½ cup crumbled feta cheese directions: 1. cook quinoa according to package directions, using broth instead of water. 2. preheat oven to 450°f. 3. line a baking sheet with foil . spread diced sweet potatoes onto baking sheet and drizzle with the olive oil. in a small bowl, mix together the ground cumin, smoked paprika, chili powder, and salt. sprinkle spice mixture over the sweet potatoes and toss with spatula to coat. roast sweet potatoes in the oven for about 15-20 minutes. toss with a spatula throughout cooking to make sure potatoes are evenly cooked. cook until potatoes are fork tender and lightly browned. 4. in a small sauce pan, add tsp garlic powder and canned black beans and cook over medium-high heat, stirring on occasion, until hot. 5. in a medium sized bowl, mix together the kale with olive oil, ½ lime juice and a few pinches of salt. massage lime and oil mixture into the kale
