At The Table with Michael McHenry Thu, 13 Jul 2017 11:42:09 +0000 At The Table with Michael McHenry At The Table with Michael McHenry KTVX ABC 4 Salt Lake City hailey it's thursday... and that means jami and katy from utah restaurant association... and sam from devour utah magazine are back "at the table" this week for lunch at provisions in millcreek. they're sitting down with the president of even stevens sandwiches to talk about creating community through a craft-casual sandwich shop with a cause. sam at the table with michael mchenry president and chief of even stevens. thanks for being here today at the table. michael hey, i'm just grateful to be leaning in with each of you. sam katy, jami one of my favorite restaurants all time provisions. why are we here? katy provisions is an amazing restaurant recently just open for lunch in millcreek. like attracts like so we thought like. even stevens, something that they really understand is this local, neighborhood coming together and giving a nice eclectic feel to where you are at. jami and you know provisions really is an american craft kitchen. craft is one of these words that even stevens, it's just we know you get it right? michael oh yeah without question right. all holy cow that looks delicious! this is what craft is all about. oh salivation. sam so michael i hope you're not going to eat all of that because i'm going to have to have a bite! what what did you get it? it looks delicious. michael i got the bahn mi. sam jami? jami grilled asparagus with burratta. i think this is like the perfect lunch! sam and then . . . katy i got the steambuns. it's cool you can get them at pork or with mushrooms. katy michael let's just have you break it down for anyone who doesn't know the premise is that even stevens is founded on. michael even stevens of course is a salt lake city based craft casual restaurant whose emphasis is sandwiches. because for every sandwich we sell we donate a sandwich to a local nonprofit partner. at even stevens it took us just under 2 1/2 years to serve 1 million sandwich and in turn donate 1 million sandwiches. we're just over 1.4 million sandwiches donated. jami ok michael, so we've got craft. we've got team empowerment. we've got heart power. would you break it down give us some information about the even stevens culture and lingo. michael it starts right there. i mean it starts right in the heart. we were looking for a way for how we describe what we do from a culture basis, what do we do culturally. like what that means to us the reason and why we are so kind of honed in on craft. it's because we believe again, the biggest difference between crafting commodity is, that craft is done by people who love it. katy what do you specifically love about food? michael well i'll tell you the first thing that i absolutely love about food is the fact that it's sacred. we have to have it and it's so tasteful and they're such a variety. i think it creates such an opportunity for us to get grounded. for me who would've thought the two slices of bread would be a catalyst for so many new friendships and relationships and sustained impacts. and what takes place there. sam are you showing other entrepreneurs other business leaders other restaurateurs for lack of a better term, the pie is big enough? michael i was asked this at an emerging brands conference last year. and they said, " hat are you gonna do when they guy next-door to you starts donating a meal for every meal he sells?" i said, "i can' wait to high-five him.". we truly want to inspire other entrepreneurs, other business owners that you can have a direct community initiative you can have a get back to your business and you can still be wildly successful. katy michael what's the next story that you're excited to tell? michael well, we're in love with the industry and we are - katy it's in love with you. michael and we are in love with filling the gap and creating experiences. i mean experience creation is kind of forefront of everything that we do. we've got something up our sleeve right now. and what i can tell you is that it's got a lot of hustle and it's got a lot of soul inside of what we're doing. and where we're excited to celebrate. katy well, sharing all of the fruits of your labor and the community. this has just been such an uplifting and inspiring time together. hailey 'even stevens' is creating a movement for craft over commodity. for more information on at the table and to view this and other episodes, check out the at the table page on our website and visit utah restaurant association
